Abstract

The bakery industry in the Russian Federation is an important sector of the food industry that provides the population with a wide range of bakery products. In recent years, the bread market has undergone significant changes due to technological advancements, changing consumer preferences, and increased competition. There is a growing demand for new types of bread with improved consumer properties, enriched with healthy additives, and meeting the requirements of a healthy diet.
